Coconut Cupcakes revisited

A little while ago I posted a recipe for super yummy coconut cupcakes, and I seem to remember musing over adding coconut to buttercream icing to top these little guys off. Well...


Awww yeah.

Coconut cupcakes are so good to make, not only because they're easy and so freaking delicious, but because topped with a nice, healthy dollop of coconut buttercream icing they look seriously dapper. 


I love myself a nice, easy recipe that's sure to impress, and these coconut cupcakes with coconut buttercream icing don't just look drool worthy, they taste amazing. 

Now, you already have the cupcake recipe, so here's the specifics for tasty coconut buttercream icing:

50g softened butter (say NO to palm oil!)
1 cup icing sugar
1/2 cup shredded coconut
Milk - extra

Bung everything together (add milk if too thick) and dollop on top of your coconut cupcakes. The coconut cupcakes recipe makes around 18, and this buttercream should stretch that far... Or not, depending on how massive your dollops are... If in doubt, add extra icing sugar/milk.
