Mixed Berry Cupcakes with Strawberry Cookies: How To Guide

So the other day I made these:

I was so pleased with how they turned out, and even more pleased with how crazy tasty (and kind of almost healthy) the mixed berry cupcake recipe was!

Mixed Berry Cupcakes!
Soften the butter and stir in sugar. Add the egg and vanilla essence, then fold in the coconut and flour alternatively with the milk. Finally, add the mixed berries and stir through.

Easy peasy!

Spoon into patty pans and bake for around 15 minutes at 180ᵒc
(Recipe makes around 14 cupcakes).

While your cupcakes are baking, start on your strawberry cookies. I used leftover cookie dough from my Pac-Man cookie post to make mine, and added a few teaspoons of cocoa to the dough to make chocolate cookies (yum!) and dusted my work surface with icing sugar instead of flour to keep them nice and sweet.

Basically, just use a sharp knife or scalpel (or cookie cutter if you want to be normal about it) to make rounded triangles (i.e. strawberry shaped) cookies. Once your cupcakes are done bung your cookies in at the same heat for around 10 minutes (do check on them, because due to their size they might be want to burn!).

Make sure both your cupcakes and your cookies are cooled completely before going any further. And by further, I mean to the land of sugary iced goodness.

Cos now it's time to get our icing on.

Ice your cookies first. I used the, erm, technique described in my Pac-Man cookie post. Basically pipe thick green icing (royal if you have it, or simply icing/powdered sugar, water and food colouring if you don't) around the top of your cookies, then zig-zag through the middle.
Hmmm... Zig-Zag... Now I want to watch The Princess and the Cobbler.
Then pipe thick red icing around the rest of your cookie...
Then white dots in the middle for seeds...
Use a lighter green to flood the top of the strawberry...
And get ready to have fun (and by fun I mean a mini-nervous breakdown) flooding the red: due to the small surface area, add your thinned icing a little at a time and use a sharp knife or toothpick to spread it evenly around the seeds and to the edges. 
Once your cookies are done, start on the cupcakes. I simply mixed icing sugar, water, and a bit of dessicated coconut to make a thick icing. Top each cupcake with a strawberry cookie and you're done!


All things considered, these pretty little things are fairly simple (albeit rather messy!) to make, and look super impressive.

And let's be honest, you can't really beat cookies and cupcakes - and with their powers combined they're like some sort of unstoppable force of sugary goodness.
Ok, and now I have to go watch Captain Planet.
